Tribal Cooks Workshop - June 3-7, 2013

Who attends this workshop? The cooks who have attended came from BIA, justice and treatment centers, senior meal sites, childcare settings, tribal schools and colleges. This is a skill building workshop for people who prepare and serve food to large groups, plan menus, maintain the inventory, and supervise other foodservice workers. What is done at the workshop? We practice culinary skills in the Nutrition and Foodservice teaching kitchen where you can try out new commercial equipment such as convection ovens, tilt pans, induction ranges, blast chiller and proofer. Culinary skills are taught by Chef Jared Thor Larson. As we practice the skills we prepare breakfast and lunch for the participants.
